Quick & Easy Turkey Chili
Anyone who knows me knows that I am not the cook in my home. It’s not that I don’t know how to cook, it’s just that my husband enjoys cooking more and who am I to argue with that? Anyhoo, on Saturday I made a turkey chili….in the crock pot LOL!! I mean I did have to cook the meat and veggies prior to putting it into the crock pot, so yes in my eyes, that counts as cooking!
Here’s the recipe:
2 teaspoons olive oil
1 medium yellow onion, chopped
3 garlic cloves, minced
1 jalapeno pepper, seeded and finely chopped
1 small to medium red bell pepper, chopped
1 small to medium green bell pepper, chopped
1 teaspoon ground cumin
¾ teaspoon dried oregano
1 pound extra lean ground turkey
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
4 tablespoons chili powder
1 28oz can diced tomatoes (with no salt added)
1 cup low sodium chicken broth
1 15oz can red kidney beans (rinsed and drained)
1 15oz can black beans (rinsed and drained)
1 15 oz can sweet corn (with no salt added)
Garnish: cheese, avocado, sour cream or greek yogurt, tortilla chips, cilantro
Place olive oil in a large pot over medium heat. Once oil is hot, add in onion, jalapenos, green peppers, red peppers and garlic. Stir and cook for 5 minutes.
Add in ground turkey, gently breaking up the meat and cooking until brown (about 5 minutes).
Add all of the spices to meat: oregano, freshly ground black pepper, chili powder, cumin, cayenne pepper and salt. Stir to combine and cook about 30 seconds then transfer to a crock pot/slow cooker.
Add the remaining ingredients to the slow cooker: diced tomatoes, chicken broth, red beans, black beans and corn. Stir until well combined. Cover and cook for 2-3 hours on low until the chili thickens.
As the chili is being cooked in the slow cooker, taste and add more seasoning as needed.
Garnish using any or all of the ingredients listed above or with anything else you prefer.
